As @mazemari.lens explained, in Argentina there are many exchange rates. To give you an example, the dollar peso ratio was 530 Argentine pesos to one dollar at the beginning of August, now it is over 720 pesos to one dollar. It is crazy!
People buy stable coins as a way of "saving" as they are hedging against the devaluation of the peso. The question is, why don't they buy dollars? Well, there are also many restrictions to be able to access the official dollar sold by the government and that is why the parallel exchange rates are so important.
There are also many restrictions to charge dollars from abroad, that is why most Argentine freelancers working for foreign companies charge directly in crypto.
For those more advanced users, given that the Argentinean financial system moves largely in pesos, DeFi offers great opportunities to not only hedge against inflation with stable coins but also to generate returns with those savings.
Beyond the fully financial, there are also great applications of NFTickets for shows, events and airplane flights. One of the most important low cost airlines in the country, called "Fly Bondi" issues all its tickets as an unnamed NFT that can be exchanged infinite times up to 3 days before the flight (at which time the passenger's name is already assigned).
I don't want to bore you with everything, and there must be many other applications that I am not mentioning, but there is a lot of crypto adoption going on and there are a lot of very smart people trying to solve problems and creating new use cases. To name a few web3 projects or companies that were born in Argentina: POAP, Open Zeppeling, Decentraland, The Sandbox, WeLook, Beefy finance, Defiant, Quark ID and of course Lemon Cash 😎.
