上海老底子每天呈送精彩文章一组 打开尘封的记忆,寻觅往昔的岁月 叙上海老底子事 忆上海老底子人 诉上海老底子情 中华平原,东海之滨矗立着一座国际性大都市—上海,上海灯红酒绿,纸醉金迷的背后也有着数不胜数的上海本地美食。 上海,简称【沪】,【申】,是中国国家级中心城市,超大城市。 作为一座繁华的国际大都市,不但留下了全世界的各界精英,也汇集了世界各地的美食,同时也吸引着世界各地的人前来品尝。 一、生煎 生煎起源于元代,清朝时逐渐在上海开始流行,说是生煎,其实是用淀粉水制成的,当地人称为生煎馒头。到了今天,许多地方的包子店往往都会挂上‘上海生煎’的招牌来兰克,这样才显得正宗。刚出锅的生煎色泽金黄,撒上些许芝麻、葱花提香。一口下去香气充盈口内,深受人们喜爱。 二、上海酱鸭 上海酱鸭突出了一个浓油赤酱的特点。看上去色泽红亮,闻上去香味扑鼻并且吃上去鸭肉也是十分鲜嫩可口,入口爽滑、肥而不腻。这当中又伴有一丝丝的辣味儿,吃上去回味无穷。其味悠远,脆中带嫩、辣中带麻、麻中带甜、甜而不腻。香味入骨,吃了就不会再忘记那股香味。 三、蟹壳黄 蟹壳黄又叫做小麻糕,作为上海的特色小吃之一,其馅包含了荠菜、白糖、葱油、豆沙四种小料。刚出炉时就像一个金黄的蟹壳,因此被称作蟹壳黄。吃上去香脆酥松、油多而不腻。其做法分为三派,甜口的以猪油白糖、豆沙、枣泥做馅、咸口的讲究用猪肉丁、还有一种是比较讲究的,得加上蟹粉、虾仁等食材才觉得正宗。 四、小笼包 上海人爱吃小笼包,热乎乎的,蒸的是上海的风味。咱们这边都叫小笼包,可上海人不认,说是正名该叫做小笼馒头,那什么小笼包那是外地人捣鼓的名堂。 五、白斩鸡 正宗的白斩鸡是使用三黄鸡制成的,因为在烹制过程中不加任何调味料只使用白水煮制,所以叫做白斩鸡。 刚出锅的白斩鸡鸡皮金黄诱人,鸡肉白嫩紧致。稍稍变凉后蘸点酱油香醋吃,鸡皮爽脆、肥而不腻;鸡肉鲜嫩可口,咸甜适中,非常美味。 六、锅贴 锅贴绝对是上海人从小吃到大的经典早点!面皮裹着肉馅放油锅边煎上那么一会儿,底部焦硬,一口下去又脆又爽口。面皮绵软,还带点肉汁,直叫人欲罢不能!上海人吃锅贴也略有讲究,趁着刚出锅,赶上热乎的就是那么一口下去,轻轻咬开面皮,吸一口里边儿的肉汁,回味无穷。外貌颇似路边摊上的煎饺,形同而意不同矣。 七、熏鱼 熏鱼是上海的凉菜招牌,也是上海人宴会的主选菜。虽然叫做熏鱼,但其实是腌制再油炸制成的,选用上等青鱼肚裆部分加入酱油与糖腌制四个小时左右,再入油锅慢炸。炸出来的鱼肉黑乎乎的就像是烟熏过一样,所以叫做熏鱼。摆盘上桌后最里边的鱼肉仍是白色,保持了青鱼鱼肉的鲜活弹性,非常好吃。 八、汤团 凉风飒飒的春天,上海人最爱的,莫过于一碗热气腾腾的汤团。甜甜糯糯的,是上海人的心头爱。一碗汤团端上桌,升腾起的热气瞬间就驱散了空中的寒意。老上海人最好那口芝麻汤团,糯米润口而不粘唇,黑芝麻糊流淌化开,嘴里充斥着猪油与芝麻的香气。鲜肉汤团更是一绝,入口好似浓汤,鲜香绝口。汤团皮也很有嚼头,弹性十足。 九、馄饨 上海本地人不太擅长做面食,但这个馄饨倒是少有的经典。同样是馄饨,上海人吃起来也有大讲究:小馄饨皮多,飘起来就像一层薄纱,紫菜、猪油、蛋皮、虾米那是一个也不能少;大馄饨馅多,最好是碱水馄饨皮,馅料扎实紧凑,饱腹感十足。抽空寻一碗老上海馄饨,那袅袅热气,暖胃更暖心。 十、上海单/双档 单/双档是上海最为著名的一道传统小吃,也叫做面筋百叶包汤。始于二十世纪二十年代初期,最早由上海苏式点心店经营,后来逐渐成为上海城隍庙,五味斋等点心店的特色小吃。“单档”在上海话里就是单吊的意思,一只面筋或者一只百叶包加碗粉丝。而面筋加百叶包,就叫“双档”。但不知从何时开始“单档”变成了一只面筋加一只百叶包一碗粉丝,而“双档”则是两只面筋加两只百叶包一碗粉丝。用特制的百叶包肉,粉丝和面筋制成。千张薄而韧,包得密不透气;面筋爽滑柔韧,香浓汁鲜甚是可口。 十一、粢饭团...
