Rosé is a safe, easy crowd pleaser to go with most boards

You've seen it on bottles. Know what it means?
It usually means blend. Funny bc many bottles use it as if it's some fancy thing. It's not. And it has nothing to do with the bottle being good
However, with Champagne, this indeed means the first and best from that growth
- If you drink American Cabs, try to learn to distinguish between vanilla and chocolate notes
These are both the result of how toasted the oak is. Lightly toasted oak gives vanilla. More heavily will give chocolate
Learn to notice both on the nose and palate
- Caymus either gets too much love from people who know nothing, or too much hate from people who know too much.
It's a good wine
- Wine is pretty much always safe to drink. The alcohol keeps harmful bacteria away
What you're really worried about is it being over-oxidized and tasting horribly
- If you're still a beginner to tasting wine, don't worry about distinguishing between tasting notes such as cherry vs pomegranate
Instead, focus on the balance of the structure. What are the body, acidity, alcohol, and tannins like?
This is key to understanding a well-made wine
- Gonna have some Vermentino tonight
Beer battered cod will be the fish. What vegetable would you pair with?
- Do you own more than one type of wine glass?
- Italian wine is my favorite, I'd pick Alpha Omega ERA Red
- Bacon, egg, and Brie cheese on a New Jersey everything bagel, with champagne.

- Ever heard of a "flabby" wine?
It's a common wine term that either lost, or never had, it's acidity or backbone. It has no "oomph".
This can happen when the wine was unbalanced to begin with, or was aged for too long
- If you're looking for better French wine, you may notice some bottles have "Grand Vin" on them. This usually means it is the best wine of that estate.
Take this seriously! French wine laws are very strict. So when they say something like this, they have to mean it
- Remember - most bottles you find in the store are meant to be opened right away.
Don't overthink that 2017 you just bought. Open it. Most bottles don't hit the shelves unless they're ready to be opened
- It's that time of year where big Italian reds just hit different.
- Sweet food needs sweet wine.
For dessert, that means the wine should be even sweeter than the food.
But don't overlook this with dinner! Cuisines such as Thai have sweetness, and will need a wine with the same. Off-dry Riesling or Gewürztraminer usually do the trick

- If your celebration calls for bubbles, Champagne is probably the way to go. In the $20-30 range, it all doesn't make much of a difference.
But beyond that, Champagne dominates, and is truly king. It's ceiling is significantly higher than other bubbles

Good conditions can make or break the year, and vintages remain important.

- Fellas, not a bad idea to keep a bottle of Target/grocery store sweet wine for the ladies. It's a biological fact that they love it.

Full, rich meals like a cheeseburger, need full rich wines like a Cabernet Sauvignon or Zinfandel. Lighter meals like shellfish need a light crisp wine like Sauvignon Blanc

- Wine is one of the oldest (non-water) beverages in human history. It can be traced back to Georgia around 6000 BC
- I do find that California wine is the way to go when introducing someone.
Unless they already have a highly aware palate, good European wine won't make as much sense. They won't work through it, so they won't get as much out of it

Had a taste of Paso Robles last night. Took a friend (complete rookie) wine tasting and we ended with this.
Really good wine! Big and bold, with soft tannins, but not too soft that the wine was flabby. Nice and smooth

- Wine is too vast to get too into specific names. Sure, there's plenty I love and know, but life is too short, and there are too many fantastic options to drink the same wine too often.
I prefer looking at it region-specific
- First up for tonight - salmon tartare.
Could easily do a Sauv Blanc and you'd be off to the races. But they had a Chenin Blanc on the list and it's been a while so I did it, and it went quite well..

This is not the time to ask for the wine menu, friends. When they offer you the $5 margarita special in a plastic cup, you take it, and love it. Read the room and relax!
- I do have three different types of glasses. One for the bigger reds like Cab, another for lighter reds like Pinot, and white glasses.
The difference in red glasses is the Pinot glass is wider at the bottom and narrower at the top. Helps to focus the aromas..

- Okay, so who knows the difference between Syrah and Shiraz?
- Have you ever tried Tannat? It comes from the Basque region, on the border of Spain & France. Big body, big tannins, with a deep color and notes of dark fruit and spices. It's also pretty big in Uruguay!
- Got asked to pick the wine list for a reception dinner.. ..but then got told I couldn't go over $20 per bottle. Challenge accepted.
- Taste is just a preference thing. What makes a wine truly "good" is structure and balance.

One good reason to drink wine with people that appreciate it - they don't look at you weirdly when you sit there with your nose in the glass and don't even sip it
- Napa is overpriced. If you a Cali Cab, and you're going under $50 for a bottle (maybe even under $100), Paso Robles has good value
- here's a gem for under $20. Tommasi Rafael Valpolicella Superiore.
- CORIMBO! - Right from Spain with this one!
- The tobacco might steer some folks away (understandably, though I like it when done right), but it serves to bring out the spices of a (good) tomato sauce nicely
