腌鱼调料：料酒、盐、蛋清、淀粉。
做法：1、鱼清洗干净后，切成大块，用腌鱼调味料腌制。鱼头对半切开，鱼肉最好切成片。如果我觉得麻烦，我会把它切成大块。
2.煎锅烧热，放入油至80%热（冒烟）。我用乐扣不锈钢锅。它可以用来做饭，也可以当火锅。保温效果也不错。放入郫县豆瓣炒香。
3、然后加入泡椒、泡姜、泡菜、蒜末、葱段、干辣椒、花椒炒香。
4.加入骨汤煮沸。如果没有骨头汤，也可以用开水代替，但味道会差一些。加酱油、盐、糖、鸡精调味。
5、汤烧开后，转小火，盖上锅盖小火炖一会，让调料的香味释放出来。
6.将鱼块放入汤中煮至生，关火，放入芹菜段即可食用。吃时用鱼汤（怕辣的撇去浮油）加炒黄豆、芥末、香菜、葱花、炸花生米、花椒、盐适量，蘸鸡精。吃完鱼，就可以涮其他菜了。
- 蒜苗炒肉
原料：五花肉100克，蒜苔300克，葱少许，花生油少许，盐少许，酱油少许
实践：
1.五花肉洗净切薄片，葱切葱花备用
2.新鲜蒜苔洗净切段
3.锅里放少许油，放入五花肉翻炒至肉变透明
4.放入蒜头翻炒片刻
5.加入生抽和少许盐搅拌均匀
6.最后撒上葱花装盘即可
- 2，干锅牛蛙虾
主料:牛蛙，虾，洋葱
制作过程
1，牛蛙块上浆加耗油生粉抓拌。
2，过入水下入金针菇，黄瓜条，牛肉丸过水冲凉垫锅底
3，锅入水下入虾子过水冲凉。
4，锅入油下入牛蛙炸下入虾过油备用。
5，锅加半勺油下入蒜子，姜片，干辣椒花椒，调香辣酱，辣妹子火锅底料半小块，耗油都一调味勺，加两勺水小半瓶啤酒调盐1调味勺，鸡精味精4调味勺，糖2调味勺，胡椒粉，生抽，老抽下入牛蛙收汁淋花椒油即可。
