### 烧｜啤酒龙虾Lobster with Beer的做法步骤
步骤 1
龙虾处理干净，沥水备用。 Clean the lobster and drain the water, set aside.
步骤 2
准备材料，注意姜切片，留蒜头，如图。 Prepare the ingredients, pay attention to slicing the ginger and leaving the garlic head, as shown in the picture.
步骤 3
凉锅热油，加入3大勺红油豆瓣、八角、香叶、花椒、干辣椒、葱姜蒜翻炒出香味后放入龙虾，转大火煸炒1min，然后加入冰糖、啤酒、生抽继续用大火烧20min（整个过程不盖锅）。 Heat up the wok, add 3 tablespoons of chili bean paste, star anise, bay leaf, Sichuan peppercorn, dried chili pepper, green onion, ginger and garlic, stir-fry until fragrant, then add the lobster and stir-fry over high heat for 1 minute. Then add rock sugar, beer, soy sauce, continue to cook over high heat for 20 minutes (do not cover the wok during the whole process).

翻炒下，收汁差不多，即可出锅。 Stir-fry until the sauce thickens, and then it can be served.

过年的时候亲戚给了20多个新鲜的海边鸭蛋，家里爱吃皮蛋，可是买来的蛋清发黑，据说是含铅不宜多吃，所以还是自己动手制作安全无铅皮蛋吧 这是皮蛋粉卖家给的方子，说的很详细，做了两次感觉非常好，颜色也超级可爱，记录一下怕以后手机里找不到了，喜欢的也可以试试！

### 自制皮蛋，松花蛋的做法步骤
步骤 1
手抓一把干茶叶放进茶壶，冲进150克开水，待茶叶泡开后取第一道浓茶水，不要茶叶
步骤 2
把皮蛋粉倒入容器中，用刚才滤出放凉的茶叶水直接兑皮蛋粉，分多次少量加入，最终成为浆糊状最佳，不可太稀
步骤 3
搅拌好需要等一个小时左右，这一个小时是让皮蛋粉和茶水发生化学反应，一小时后搅拌均匀就可以继续下面的步骤
步骤 4
带手套把蛋放进容器里涂一层皮蛋浆，滚一圈看不见蛋皮为宜，然后放进缸坛（宽口厚塑料瓶也可，一定要密封性好的容器），我家里没有，所以用的小钢盆，依次做好全部，盖紧容器，或者用厚塑料袋2到3层扎紧，不能漏气，放在室内阴凉处
步骤 5
温度的控制对皮蛋的形成非常重要，温度30度以上15天左右就可以制作成功，20度以上20天左右，温度10度以下的需要用棉被或衣物包好保温来完成制作，因全国地区不同，制作时间不同，以上数据根据自己的实际情况来确定天数
步骤 6
制作成功的皮蛋蛋黄接近墨绿色，蛋清呈黄色，类似果冻状态，剥壳后不会有液体流出状态是最成功的。皮蛋一旦成熟后再过2到4天会蛋清慢慢化成液体状态宣告失败，所以说，事先判断快要成型的1-2天内剥开1-2个蛋查看情况。开坛后务必马上封好，否则影响继续腌制，一旦成熟立即停止继续腌制
步骤 7
鸡蛋腌制时间要比鸭蛋减少3-5天左右，鹌鹑蛋30度以上5天左右成型，20度以上7天左右，10度左右约10天成型
步骤 8
皮蛋腌制成熟后立即取出，洗掉外皮皮蛋粉，沥水晾干放1-2天即可食用，也可放冰箱冷藏保存
