While you may have seen a meticulously assembled variation of this dish (known as confit bayaldi) made famous in the 2007 animated film *Ratatouille*, our version here is less fussy and much more forgiving in terms of presentation. In this classic ratatouille recipe, various vegetables are cooked down together to create a flavor-packed summer stew. While it may take some time to cook all those components down, there really isn’t too much effort involved. Trust us—your patience will be more than rewarded once you serve up this iconic dinner. Here’s everything you need to know:
**What is ratatouille?**
Originating in Nice, France, ratatouille is a humble dish composed of various vegetables stirred and stewed together until they begin to melt into each other. Once known as a “peasant dish,” ratatouille is a low-maintenance meal: The end goal is to have an almost creamy consistency as the vegetables break down gradually during the cooking process.
The core vegetables you’ll need are tomato, zucchini, eggplant, bell pepper, onions, garlic, and green herbs. There are two types of tomatoes in our version: canned crushed tomatoes for a smooth, saucy texture, as well as fresh tomatoes for a bright sweetness not found in cans. But if you can’t find good fresh tomatoes at this time of year, a 14-ounce can of diced will do just fine.
**How to make the best ratatouille:**
The best way to ensure each vegetable’s distinct textures and flavors are highlighted is to cook them all separately at first, then bring them together at the very end for a final simmer. It’s important to begin with the eggplant selection and preparation. Choose smaller eggplants—they tend to be more tender and less astringent. Chinese eggplants will yield the creamiest, silkiest texture once cooked; avoid large Italian eggplants because they tend to be more bitter and tough. To help break down the eggplant, it’s crucial to toss the diced pieces with salt and let it sit for half an hour before patting them dry. This will extract some astringency, and season and soften the eggplant before they ever touch heat.
**Serving ideas:**
Once you’ve cooked a batch of ratatouille, you can serve with crusty bread like sourdough, serve alongside pasta, or spoon it over cooked rice. Want to serve it as more of a side? Pair this with your favorite chicken or steak dinner for the easiest, most wow-worthy meal.

Step 1In a colander set over a large bowl, toss eggplant with 1 teaspoon salt. Let sit at least 30 minutes, then squeeze off excess moisture and pat dry with paper towels.
Step 2Meanwhile, in a large pot over medium heat, heat 1 tablespoon oil. Add onion and 2 chopped garlic cloves; season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally, until onions turn translucent, 5 to 6 minutes. Add bell pepper and cook, stirring occasionally, until softened, about 6 minutes. Transfer onion mixture to a large bowl.
Step 3In same pot over medium heat, heat 1 tablespoon oil. Add zucchini, rosemary, and 2 chopped garlic cloves; season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring often, until zucchini softens and turns golden, about 8 minutes. Transfer zucchini mixture to bowl with onion mixture.
Step 4In same pot over medium heat, heat 1 tablespoon oil. Add eggplant, thyme, and 2 chopped garlic cloves. Cook, stirring often, until eggplant turns golden and translucent, about 8 minutes. Transfer eggplant mixture to bowl with onion mixture.
Step 5In same pot over medium heat, heat remaining 1 tablespoon oil. Add chopped tomatoes, granulated sugar, all remaining garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Cook, stirring often, until tomatoes begin to break down and caramelize, 6 to 8 minutes.
Step 6Add crushed tomatoes, sliced basil, and all reserved cooked vegetables to pot and bring to a simmer. Reduce heat to medium-low and continue to simmer, stirring occasionally, until vegetable textures begin to melt together, 8 to 10 minutes.
Step 7Top with more basil. Serve with bread alongside.

Our perfect crab cake recipe is everything you could ever want: It’s buttery, full of fresh crab flavor, golden and crispy, and served with our homemade tartar sauce. Ready in 30 minutes, these cakes are the perfect easy dinner or impressive appetizer if you’re looking for a restaurant-worthy meal to impress (without the effort). Here’s everything you need to know:
**The best type of crab meat for crab cakes:**
If you can, we highly recommend buying jumbo crab meat for your crab cakes. This meat comes from two large muscles, and is known for its bright white color and superior taste. It's also made up of bigger chunks, instead of shredded smaller bits, which is ideal for making crab cakes. While fresh crab is undeniably delicious, it’s often expensive and can be tricky to remove from the shell. Canned jumbo lump crab meat is perfect for a recipe like this, and can be found almost anywhere.
If you can't find jumbo (or don't want to splurge on it), use lump crabmeat—it's usually a blend of broken jumbo pieces. Whichever meat you choose, don't forget to pick through the crab meat to ensure there's no pieces of shell!
**How to make crab cakes:**
Although you could probably bake these crab cakes, we really recommend searing them in a hot skillet with neutral oil. That crunchy golden crust is half of what makes crab cakes so iconic—we definitely think it’s worth pulling out that pan for. That being said, if you’re really averse to pan-frying, our air fryer crab cake recipe is another great option.
**Storage:**
Leftover crab cakes can be stored in the fridge for up to 4 days and in the freezer for 6 months. To make sure they taste the best, we recommend avoiding the microwave or oven for reheating. Just a quick few minutes on each side in a pan with some olive oil, and they'll be warmed through, golden brown, and ready to eat.
We definitely recommend cooking them right before serving, but shaped patties hold well in the fridge for 1 to 2 days when covered well.

If you’re a fan of sticky buns, cinnamon rolls, and other sweet breakfast pastries, let us introduce you to your new favorite—monkey bread. This cinnamon-sugar pull-apart bread is as fun to make as it is to eat, and makes for a spectacular centerpiece whether you’re serving it for a holiday morning brunch or are bringing it to a breakfast potluck (we’d serve it for dessert without hesitation too). It isn’t fussy to make, is easy to get creative with, and serves a crowd with ease… quit monkeying around and make this already!
**What is monkey bread?**
“Monkey bread” as a term has been around since the turn of the 20th century, and originally referred to a shortcut to buttered rolls that could be shared with a crowd. Around the same time, a similar Hungarian recipe called Aranygaluska was brought to American attention by Betty Crocker under the name “Hungarian Coffee Cake.” Somehow the two became synonymous, and the sweet, joyful monkey bread we know and love today was born.
To make monkey bread, you’ll generously coat pieces of dough in melted butter and cinnamon sugar, pile them up in a Bundt pan (the hole in the center guarantees everything evenly cooks), then bake. The glaze isn't completely necessary, but who are we kidding? You know you want it.
This recipe takes some extra time since you're making your own yeasted dough (instead of using canned biscuits), but we promise you it's well worth the effort! Making your own dough results in the softest, fluffiest version of monkey bread that’ll be nearly impossible to stop eating.
**Why is it called monkey bread?**
There’s really no definitive answer here. The most common explanations are that once baked, this bread resembles a “barrel of monkeys” and is then eaten picking it apart with your fingers, like a monkey would, but we may never know the complete truth. To be honest, we’re not sure we care—one bite of this sticky cinnamon bread, and you won’t be worried about the name either.
**Variations:**
Though this classic sweet version is pretty perfect, monkey bread also lends itself to a wide variety of flavors. You could stuff your balls of dough with cream cheese (aka “gorilla bread”), add additional sweet flavors like we did in our babka monkey bread or our blueberry monkey bread, or even go savory, like in our breakfast monkey bread. Once you’ve got the method down, feel free to have fun with it.

DOUGH
Step 1Grease a medium bowl with cooking spray. In a large measuring glass, sprinkle yeast over warm milk. Let sit until foamy, about 5 minutes.
Step 2In the large bowl of a stand mixer fitted with the dough hook, beat flour, brown sugar, and salt on medium speed until combined. Add yeast mixture and eggs. Beat until dough starts to come together. Add butter, 1 tablespoon at a time, letting each piece incorporate into the dough before adding the next. Continue to beat on medium-high speed until dough is soft, smooth, and a little sticky, about 5 minutes.
Step 3Transfer dough to prepared bowl and cover with a kitchen towel. Let rise until doubled in size, about 1 1/2 hours.
ASSEMBLY
Step 1Grease a large Bundt pan with softened butter, making sure to coat all sides well, including the inner tube. On a lightly floured surface, turn out dough. Pat into a square about 1/2" thick. Cut into 60 pieces. Roll each ball to about 1" in diameter.
Step 2In a small bowl, combine granulated sugar and cinnamon. Place butter in a small heatproof bowl and microwave in 15-second increment until melted.
Step 3Working one at a time, dip balls into butter, letting excess drip off, then roll in cinnamon sugar. Place into prepared pan, layering as you go. Cover with a towel and let rise until dough has expanded, 30 to 45 minutes.
Step 4Preheat oven to 350°. Bake monkey bread until top is deeply golden, about 40 minutes. Let cool 10 minutes, then invert onto a platter. Let cool 10 minutes more before icing.
GLAZE
In a medium bowl, combine confectioners' sugar, cream, and vanilla. Spoon over warm bread.

Step 1In a medium skillet over medium heat, heat oil. Cook onion, stirring occasionally, until softened, about 5 minutes. Add garlic, chili powder, cumin, and garlic powder. Cook, stirring, until fragrant, about 1 minute. Add salsa and bring to a simmer, then add chicken and toss to coat; season with salt and black pepper. Remove from heat.
Step 2Spread about 1/4 cup beans in center of tortillas, then sprinkle with both cheeses. Top with about 1⁄2 c. chicken mixture and sour cream. Roll into a burrito by folding top and bottom of tortilla into center, then fold right side over filling, tucking and tightly rolling to seal. Transfer to a plate seam side down.
Step 3Working in batches, in an air-fryer basket, arrange burritos seam side down; spray with cooking spray. Cook at 400° for 5 minutes, then turn, spray with more cooking spray, and cook 5 minutes more.
Step 4Divide chimichangas among plates. Drizzle with hot sauce and sour cream. Serve with guacamole alongside.
