How is it possible in terms of code I don't know...but I've used this type of contract and you can simply do whatever you want with the NFT... delete, change the image, metadata, name, bound or not the wallet...

Your wallet only holds the base chain token. All other tokens and nfts are held in their respective contracts. I don't know the details here but if a token contract has admin privileges or is upgradable to have admin privileges then it can do anything with your tokens.
Tbh, I don't know how POAP on Gnosis works. In general, they have a very strange mint mechanism. It's possible to mint POAPs to a wallet even without signing anything from it. I just didn't know the team could burn it if they wanted to 🤣
