- Still trying to figure out how to share after people mint it - so here goes the recipe again just in case :)
Rosemary Farinata
2 cups water
1 cup chickpea flour
70cc best olive oil u can get your hands on + 3 tbsp for cooking
1/2 tsp salt
2 fresh rosemary twigs
Mix water, flour, oil and salt with a wire whisk. Let it rest for 90 minutes.
After it rests, preheat up the oven to 220C, heat up 3 tbsp of olive oil on a non stick large pan on the stovetop. Pour the batter until it is starting to get brown on the edges.
Now you have two options. I like #2 best but #1 is easier:
1- pop pan in the oven till the top is cooked but not dry (about 15 min)
2- FLIP the pan on a baking tray with parchment paper covered in a bit of oil. Cook for 15 min.
Once this is done, you can add any topping. Any mediterranean inspired thing will work well. Think of fresh prosciutto, any roasted veg, burrata!!!, ricotta, really, anything you’d put on a pizza but pineapple, don’t be insane.
I love it for brunch of for a protein packed vegetarian dinner!
