I don's think it is a good idea.

Good
Absolutely not if you are a serious artist. It's disrespectful to collectors. Collectors make decisions based on available data from the artist. In the traditional art market, the last editions have higher prices because collectors know there will be no other editions. If you add new editions, it's a very unprofessional act.
No
probably not
You can set a limit to how many could ever be minted in the contract. Perhaps you might have 1000 max supply, you initially release 500, and then your limit is transparent, but you still have room to keep creating under the same collection. I think the big argument will be that you could just keep making more and the collectors will continually have less rare items. This max supply transparency might solve it. Another thought is it really depends on the intent. Constantly creating art in a max supply collection is kinda like pages of a sketchbook and releasing them to the world as you go. On the other hand, telling everyone it will only ever be 500 and then deciding to add more is definitely not encouraged.
best idea I've heard is for a multiverse situation--keeping the integrity of the OG collection but adding booster packs, powerups, added storylines that are considered different collections. frankly I love the idea
